During mango season in Miami there is an abundance of mangoes. Since I have two friends with mango trees in their backyard, I had an endless supply. I made mango salsa, mango and quinoa salad, mango smoothies, and this yummy Mango Moscow Mule with homemade ginger simple syrup.
Mango Mule recipe:
1.5 oz Tito’s Vodka
1 oz fresh mango nectar or juice
1 oz fresh lime juice
.25 oz ginger simple syrup (see recipe below)
2 oz Reed’s Ginger Brew (or Ginger Beer)
1 slice candied ginger and lime on pick for garnish
Fill rocks glass with ice. Add ice, vodka, mango nectar, lime juice, and simple syrup into a shaker. Shake well and strain into rocks glass. Top with ginger brew. Garnish with candied ginger and lime on a pick.
Bonus recipe:
Ginger simple syrup
In a small saucepan, combine ½ cup of water with ½ cup of sugar and heat over medium heat until combine into syrup. Add 1 tablespoon of grated ginger. Let cool before using.
